Pasta with Sausage and Kale
We picked up our second Food Connect box last night, and it was a doozy! We got two big heads of broccoli, two cucumbers, kale, mushrooms, mesclun salad mix, potatoes, apples, bananas, lemons, and oranges. The kale caught my attention immediately, as I can’t remember ever cooking or eating it before. To the Internets! I found this yummy-looking recipe for fettucine with kale and sausage. (I didn’t have fettucine so I subbed in some curly pasta from the pantry.) It was quick and tasty! Highly recommended.
The next challenge will be those mushrooms. I am not historically a big fan of the mushies, but I’m willing to try. What should I do with them? I think my biggest problem with them is slimy texture, so recipes that avoid that would be preferred. Any tried-and-true suggestions?

Here’s my favourite mushroom recipe. We never add the tomatoes though that could be nice too.

Cindy has a recipe for Kale soup with Kielbasa and potatoes its pretty good actually. You should ask her for it as there cant be many uses for the stuff.
Mushrooms can add a great depth of flavour so if its the texture you could chop it very small and add to just about everything. A fav is mushrooms with garlic, onion, butter or oil cooked till crisp and added to pasta for a quick dinner.
My favourite Thanksgiving dish is mushrooms stuffed with spinach souffle and parmesan — you just use the frozen kind, although I haven’t seen it here :-/ But they come out non-mushy/slimy because they are baked. You could potentially try different fillings. You want moderately big mushrooms, too.
Kale is awesome. Kale chips! Also, kale and barley soup is one of my faves.
